INGREDIENTS
• 1 container Steph’s Fresh Basil Pesto
• 1½ lbs gold potatoes, cut into bite-sized pieces
• Olive oil
• Salt and Pepper to taste
• ¼ cup grated parmesan cheese
DIRECTIONS
1. Prepare the potatoes: Preheat oven to 425°F. Cut the potatoes into bite-sized pieces and place them on a parchment-lined baking sheet.
2. Season: Drizzle potatoes with olive oil and season generously with salt and pepper. Toss to coat evenly and spread them out in a single layer.
